Confession, I made these up and tested them at 11:30 pm tonight as a way to have a healthy school snack for Makayla in the morning (and to perfectly honest... a peanut butter snack sounded good to me in that moment too and I don't eat carbs within 3 hours of bed anymore in order to allow for maximum benefit during my first hour of sleep when human growth hormone peaks. Insulin competes with growth hormone so if you have carbs right before bed you won't produce large amounts of incredibly awesome human growth hormone and receive benefits like muscle repair, fat burning, anti-aging and more!)
I always try to abide by the following for baking for my family:
1) Gluten Free
2) Dye Free
3) Chemical Free
4) Trans Fat Free (no hydrogenated oils)
3) Low Sugar
These cookies hit the spot! They required such little kitchen clean up I did a major happy dance since usually my kitchen looks like a Tsunami came through after I am done...total devastation! But with this QUICK and SIMPLE 3 ingredient recipe all I did was wash one small bowl, spatula, tablespoon and threw out the sheet of parchment paper. DONE! So, without further delay...here you go... get your glass of non-dairy milk ready to wash these delicious, warm peanut buttery creations down.
3 INGREDIENT PEANUT BUTTER COOKIES
1/2 cup creamy organic peanut butter (softened)
1 organic cage-free egg
1/2 cup Swerve Confectioners Sugar alternative (I get mine on Amazon)
Preheat oven to 350F. Line cookie sheet with parchment paper. In a bowl mix all the ingredients with a spatula until well combined. Using a rounded tablespoon, scoop batter onto lined cookie sheet. Using a fork press to make the criss-cross pattern across the top and flatten cookies a bit. Bake for 15 minutes. remove from oven and let cool for 10 minutes before taking them off the tray. Enjoy!
