Fluffy Almond Flour Chocolate Chunk Cookies

These bad boys turned out great! They were fluffy and delicious. Gluten-free, grain-free, high fiber and low sugar. 



1 and 3/4 cup almond flour
1/4 cup coconut flour
1/2 tsp baking powder
2 eggs
1 stick grassfed butter
1/4 tsp Vanilla
2 tbsp maple syrup
Chocolate chunks 


Mix dry ingredients in one bowl and wet in another. Add wet into dry and mix well. Fold in chocolate chunks or chips. Use a tablespoon to make cookie dough rounds and then gently press them down to flatten a but or it will be tough to cook them all the way through without burning the outside. Bake on parchment paper lined cookie aheet. 350 F for 12-15 minutes or until golden brown.
