Boy Girl Paleo Pancakes
I have been all about colorful creations with superfood powders as of late. I'm not sure who gets more of a kick out of it...Mak or me?! Mama's need fun too right? These blue and pink pancakes, we named Boy-Girl pancakes are gluten-free, grain-free and dairy-free.
For the Paleo Pancakes - you can either cheat and get the packaged paleo mix like Birch Bender or you can whip up your own batch from scratch using the recipe below. Then half the batch gets a blue superfoods powder like Blue Ocean Blend by Unicorn Superfoods and the other poured into a separate bowl gets a pink based powder like Pink Pitaya also by Unicorn SuperFoods or beet root powder
I used Unicorn Superfoods Brand in many of the colorful recipes on this site, but if you looking for your powders a little faster than them shipping from Australia there is always Amazon.com you can check out. I personally have not tried other brands but ones like Suncore Foods from California which are certified organic seem like a good alternative as well. Suncore Foods has a blue powder from Butterfly Pea flower (a flower high in antioxidants from Thailand and Myanmar). There is a slight advantage in using Ocean Blend Superfoods powder though because it combines spirulina, butterfly pea powder, cinnamon, ginger and coconut powder which is delicious in pancakes. The more powder you add for a brighter blue, the more spice and flavor the pancakes will have.
Spirulina: high in antioxidants and has anti-inflammatory benefits. Contained B1, B2, B3, copper, magnesium, potassium, manganese - read about it's many benefits here
Butterfly Pea Powder: full of antioxidants, may help reduce skin damage from an influx of too much sugar (meaning it has potential anti-agin properties for the skin) , reduces inflammation. It may boost eye health and support immunity. What is also neat is that the powder will change color based on the pH level of what it is added to. It can range from light blue to deep blue to purple based on what it is added to.
Pitaya (Dragon Fruit) benefits: full of phytonutrients, antioxidants, carotene, protein, vitamin C, calcium, iron and more. It may help eliminate heavy metal toxins. Read more about the benefits here.
If using Birch Bender Paleo Mix - I personally beef up the protein content for Makayla by adding 2 eggs to the dry mix instead of just water.

1 cup Paleo Pancake Mix
2 whole eggs
1/4 cup water or non-dairy milk
optional: 1 tbsp melted grass-fed butter - to add moisture and healthy fats
Mix well and divide batter into two separate bowls. Add 1 tsp pink pitaya to one bowl and 2 tsp blue superfoods to the second bowl. Stir well until colors blend completely. Cook as you normally would a pancake.

Scratch Made Paleo Pancakes:
(Basic recipe from Downshiftology.com - then I added the superfoods)
1/2 cup almond flour
1/3 cup tapioca flour (I have omitted this before and added 1/3 cup GF flour) instead
1/4 cup coconut flour
1/2 tsp baking soda
1/4 tsp salt
4 large eggs
1/4 cup almond milk
1 tbsp honey (or maple syrup)
1 tsp white wine vinegar (or 1/4 tsp baking powder)
1 tsp vanilla extract
ghee, butter or coconut oil to coat skillet
Whisk all of the dry ingredients together in a bowl.
In a separate bowl, whisk all of the wet ingredients.
Add the wet ingredients to the dry and whisk until well combined.
Divide batter into two separate bowls.
Add 1 tsp pink pitaya to one bowl and 2 tsp blue superfoods to the second bowl. Stir well until colors blend completely. Cook as you normally would a pancake.
