Frozen Mermaid Tail Treats
Who doesn't love chocolate? If you said you don't there is something I just don't trust about you! LOL How can you NOT like chocolate?? It just doesn't seem possible. Instead of store bought chocolate that can contain very little real cocoa and often be made with hydrogenated oils and other junk, we like to make our sweet treats instead.
What you will need:
1 mermaid tail - silicone mold (like this one we used)
1 tbsp coconut oil
1 Tbsp coconut manna ( I use Nutiva here)
1/3 cup non-dairy chocolate chips (we used Enjoy Life here) you can also use unsweet cocoa powder and stir in xylitol to keep sugar count low (we use both versions)
2 tsp chia seeds (optional- adds fiber and omega -3 fats)
Combine chocolate chips (or unsweetened cocoa powder), coconut manna and coconut oil in a microwave safe bowl. Melt on low power or cook in 15 second increments so not to burn the chocolate or coconut manna. Stir well until completely smooth. Mix in xylitol if you didn't use chocolate chips and stir in chia seeds. Pour into mermaid molds. Place in freezer until frozen solid. We just did it overnight so I am not sure how long it would take to freeze otherwise.
