Pink Unicorn Smoothie

Why Pink? Why Unicorns? Because in little girl world both of those things ROCK! And let's face it... even in grown up female world...those two things combined are still fun for us! I have been all about colorful creations lately for a number of reasons 1) I want to make food experimenting for Makayla more fun so she will try new things 2) give our "regular" foods a nutritional boost with a new and exciting look 3) prove food is fun without artificial junk. 4) Instagram has inspired me to be more fun with pictures and posts. 

 

While I LOVE the creativity from YouTube bakers and creators like Rosanna Pansino  or just "Ro" as many people refer to her from Nerdy Nummies, I still don't endorse the use of artificial food dye - especially when it comes to enticing kids! She has done an incredible job building a following and marketable brand with her creations, but I personally want to appeal to kids in a healthier manner here. Food dyes have been linked to damage in the brain, possible cancer growth, behavioral and ADHD concerns and skin tingling, itching and rashes to name a few documented issues. No amount is an acceptable ingestible amount in my books. Now imagine the damage being done to kids who consume them even if hidden in foods on a daily basis! I shudder to think.

 

When you search this site for colorful, fun recipes using superfoods type in "unicorn" to get all the related posts! On to our nutrition packed Pink Unicorn Smoothie recipe:

 

PINK UNICORN SMOOTHIE

 

  • 1/3 tsp Pitaya Powder (from Dragon Fruit. We use Unicorn Superfoods Powders here) 

  • 1 scoop strawberry (or vanilla) clean protein powder (I used Olly Strawberry Protein here)

  • 3/4 cup almond milk (to keep it lactose free) 

  • 1/4 cup coconut milk/cream (the full fat real stuff!)

  • 1/3 frozen banana

  • Optional:  1 tsp local raw honey and 1 scoop MCT Oil Powder (I use the powder to avoid digestive upset in kids) 

  • 2-3 ice cubes

BLEND ALL INGREDIENTS TOGETHER. ENJOY IN A FUN CUP!

 

Note: If you use vanilla flavored protein try adding a couple of frozen organic strawberries in too. The nice pink color came from the Pitaya mostly in this drink but adding real strawberries will kick it up a notch too) 

 

I used Olly in this case because it is plant based to give variety of nutrients (a nice change up from using Whey all the time in our house) and it has some fiber (a prebiotic) and probiotics for improving gut health which is massively important to our children brain health, immunity and ability to break down nutrients properly.
