Coconut Flour Waffles!

Ever look at the ingredients on most store bought waffles?! The ingredients are no beuno and the amount of sugar is through the roof! That is definitely not setting your child up for success that morning. Refined grains and hydrogenated oils are inflammatory and do gut damage. Then the sudden sugar surge causes them to act up then crash later. This cycle repeated over time causes insulin resistance and then we wonder why we have so many teens and adults with weight problems! Instead make this quick homemade version to give them loads of fiber, satiating fats and nourishing proteins! Protect their gutbiome and brain by going gluten and grain free early in life (or at least dramatically dimishing their exposure to those offenders). You may just find these substitutions also help their immune systems ward off the petri dish we call school or daycare.


4 Tbsp coconut flour

1 1/2 tsp baking powder

4 oz organic cream cheese

1 Tbsp grassfed butter

1/2 tsp vanilla extract

1 tsp cinnamon

1 tbsp real maple syrup or maple extract (if not sweetening lightly with real sweetener try erythritol based sweetener to keep sugar even lower) 

4 organic cage free eggs

almond milk as needed to thin batter


Preheat waffle maker. Soften butter and melt cream cheese. Add eggs, cream cheese, butter, vanilla, maple and seeetener to the bowl of an electric mixer. Mix well. Add in baking powder, coconut flour and then drizzle in almond milk as needed to thin batter. Use a measuring cup to scoop batter into waffle maker. Enjoy warm!
