Mug Muffin (Coconut Flour Version)
Have you tried my almond flour Keto Mug Muffin? This is a lighter tasting and less expensive version. Organic coconut flour seems to be selling for about half the price of almond flour lately, so this is the more economical family version and is a bit lighter and less hearty tasting so the kiddos may enjoy it as much or even more than the almond flour version. With 8 grams of fiber and only 3 net carbs you are fueling your belly and your kids bellies with prebiotics for good gut health without loads of insulin spiking amd bacteria feeding sugars! This will keep you all full and satisfied for quite a while. Oh and dont forget the 8 grams of muscle building protein. (Add eggs or nut butter to the top to beef up the protein by making it a couple of open face sammys).
1 whole organic egg
1 TBSP grassfed butter
1 TBSP organic cream cheese
2 TBSP organic coconut flour
1/4 tsp baking soda (non aluminum)
1 TBSP water
In a microwave safe mug add the butter and cream cheese and soften for 30 seconds. Stir until they are liquified and mixed well. Add the baking soda, coconut flour, water and egg. Mix well until fairly smooth. Scrap batter off the sides of the mug so most of it is in the center of the cupz Place mug in the microwave for 90 seconds. Carefully remove hot mug. Flip upside down so muffin comes out. Slice horizontally and place both pieces in the toaster oven to firm up texture. Add your favorite toppings and enjoy warm!
