Simple Fish and Potato Dinner

Protein? Check! Carbohydrate? Check! Nourishing fats? Check! Green Vegetable? Check! Fresh fruit? Check! This quick meal covers all the bases for your kiddos! 

1. Crunchy fish: (this was frozen cod with gluten free crust). Microwaved for 40 seconds then places on a baking sheet and broiled until crispy on both sides. 

2. Potato thins with shredded organic cheese: wash and peel a potato, then slice it lengthwise in very thin strips. Toss with olive oil , sea salt and peoper. Microwave for 5-7 minutes to soften. Place in greased baking sheet in a single layer. Place under the broiler. Flip when one side becomes golden and broil on the other side. Remove from oven and sprinkle on shredded cheese. Cheese will melt quickly or you can pop back in for 20-30 seconds under the broiler. 

3. Cut fresh broccoli into bite size florets. Microwave in a glass bowl with grass fed butter and sea salt for 1-3 minutes depending on how much broccoli or use the stove top to sauté florets. 

Pair 1-3 with organic sour cream for dipping. Add a small bowl of fresh sliced strawberries (or other berries) for a complete meal.
