Tart & Tangy Crunchy Fruit Salad
Pregnancy hormones have us mama's all over the map with cravings and aversions. I am fortunate enough o have never had morning sickness, so my mornings through to mid-day are pretty good by all accounts. But late day into the evening is when I am plagued with serious fatigue (like comatose on the couch by 8:45 type of fatigue) and food aversions. Not much sounds consumable at night to me. However around 8 weeks I wanted FRUIT... all kinds, but I wanted a variety of tastes and texture (at least it wasn't ice cream carvings right?!). So, the nutrition and worried mama in me decided to beef up the nutritional value beyond simply eating a piece of fruit. Enter the Tart & Tangy Crunchy Fruit Salad.
While my base fruits change based on whats ripe or what I am in the mood for my first bowl consisted of blueberries, mango, strawberries, chopped raw almonds and hulled hemp hearts and it is all mixed in with a squeeze of fresh lemon! My mouth waters just thinking about it now! It is sweet, south, smooth, crunchy, nutty and filling. It is packed full of antioxidants, fiber, omega's from the hemp and almonds and even adds a bit of protein. All wonderful makings for a growing baby and a mama who's body is in high demand!
Sometimes this bowl of sweet magic is filled with Pink Lady apples (because those are simply amazing and have a tang of their own!), raspberries, blueberries, strawberries, pecans and hemp seeds and of course the lemon juice!
This never gets old. It satisfies my sweet tooth and because I combine the carbs with some fat and protein I don't have false hunger a little later because my blood sugar isn't all over the place. Makayla likes getting in the action too (although we leave out the lemon on hers.. little too tart for her tiny taste buds). The bright colors are attractive to lots of kids... see if you can get your kiddos in on the action too. Whatever they have a hand in creating and can be proud of, they may actually give a try!
