Spiced Protein Mini Muffins

Makayla and I love to bake and spend time making creations in the kitchen. I remember doing that with my mom as a kid and it always made for fun bonding. I want our baked goods today to serve more of a nutritional purpose while they taste so delicious and not just have it be one OR the other. We picked up Namaste Gluten Free Spiced Cake mix (at Publix but it is also at Walmart  and on Amazon etc) and we decided to "healthify" it the Mak and Mommy way! We added quality protein (with grassfed whey and extra whole eggs), healthy fats from several sources like chia, hemp, coconut manna and whole eggs and fiber (from the chia and hemp). Perfect snacking size! 

 

 

 

Gluten -Free Spiced Protein Mini Muffins 

(Yield approx 48)

  • 1 box Namasta gluten free spiced cake mix

  • 5 whole eggs

  • 1 cup filtered water

  • 1/3 cup Nutiva Coconut Manna

  • 1 Tbsp chia seeds

  • 2 Tbsp hulled hemp hearts

  • 2 scoops unflavored grass fed whey protein

  • 1 handful (up to you!) Enjoy Life dairy free chocolate chips

 

DIRECTIONS:

Preheat oven to 350 degrees F. Spray mini muffin tin (24 count) with non-stick spray. Melt coconut manna and stir jar well. Mix all wet ingredients together to include coconut manna. Stir in cake mix. Add in chia and hemp seeds. Mix well and use a rounded Tbsp to scoop into each muffin tin. Bake 10-11 minutes until fork comes out clean in the center. Enjoy!  

 

On just a couple of them ( since I don't like adding lots of sugar) we just used a light smear of vanilla icing made from real sugar and palm oil instead of more mainstream store bought icing which is loaded with dye, chemicals and hydrogenated oils. They were divine! Here is the icing we found at Wholefoods  that is organic and sustainably sourced.
