Low Carb Bagel Kids Will Love
Makayla has only had a "real" bagel once in her life at a relatives house. I just never saw the benefit of loading her up on gluten and 12 times more sugar than her normal blood sugar levels and it a healthy breakfast. But now that she is in school and not as sheltered from outside influences, I don't want her to feel so deprived growing up that she goes the exact opposite way with her healthy choices later in life. So, we make an effort to get creative in the kitchen as often as we can. Living well shouldn't mean a list of "can't haves", but instead a wide variety of delicious "great to haves". A recent nutrition client of mine stumbled upon this recipe and within 20 minute of her posting it asking if it was an allowed recipe, I had our first batch made and the thumbs up approval from Makayla. It is only 5 ingredients and can be made in about 15 minutes. The recipe yields 6 good size bagels with 320 calories, 21g of protein and 28 grams of fat with only about 5 net carbs. This will fill your children's bellies, nourish their hormones (that is the job of good fats), build their growing bodies (thanks protein!) and keep blood sugar from spiking (high fiber from the almond flour) and then crashing leaving you to deal with a whiny screaming toddler monster 30 minutes later! I have noticed the only time my daughter gets a bit if a nasty attitude is when her blood sugar spikes then plummets when she is exposed to higher carb foods or has gone too long without food. Let's get baking!
Gluten-Free, Low Carb, High Protein Bagel
1 Tbsp gluten-free baking powder
1½ cup almond flour
2½ cup organic mozzarella cheese (I used Mexican shredded cheese on my first try- the one shown in the pictures and it as yum!)
2 oz cream cheese (cubed)
2 large organic eggs (beaten)
Preheat oven to 425. Cover a baking sheet in parchment paper. In one bowl combine almond flour and baking powder (I used ¼ tsp cream of tartar per teaspoon of baking powder because I didn't have it on hand during this first try... I will see which rises better in later attempts). In a glass bowl combine cubed cream cheese and shredded cheese and microwave for two minutes stopping every 30 seconds to mix. Mix melted cheeses together very thoroughly. Beat eggs in a small dish and add to almond flour and baking powder. Add those contents to the melted cheese bowl and knead into a dough. Form 6 bagels and place on parchment. Bake for 8-12 minutes until golden and cooked through in the center.
